vegan coffee and date cake

coff and dateThis delicious date loaf is probably one of the easiest recipes you’ll ever encounter – and it’s sugar free, and vegan too! With just three ingredients, it’s the perfect option for when the pantry seems bare and you need to whip up something tasty.


  • 375g pitted dates, roughly chopped
  • 2 tsps of instant coffee
  • 1 cup self raising flour


Add coffee to 1 cup of boiling water, stir, and then pour over dates. Leave dates to soak for 2 hours or more. Stir in flour until mixture is smooth and combined. Pour mixture into a greased or lined loaf tin, and bake for 45 minutes at 170 degrees Celsius.

Optional extras: 

  • Sprinkle top of loaf with blanched almonds before putting into oven
  • Add 1 tablespoon of crushed ginger when adding flour
  • Add a handful of chopped walnuts to the mixture before pouring it into tin

Serve warm with butter or nut spread. Enjoy!
