The more colourful your salad, the better! This super-colourful, super-nutritious salad is a great way to transition into eating lighter, Summer-y foods as the days warm up. Enjoy!
Spinach leaves or lettuce mix, roughly chopped
1 sweet potato, cut into cubes and roasted
Sundried tomato strips
Cubes of cheese and/or fetta (as many as you feel like!)
1 can of corn
1 can of chickpeas
1/3 cup of sunflower seeds
Cherry tomato pieces
Optional extras/substitutions: 200g penne pasta (for an extra filling salad), walnuts, mango pieces, pineapple pieces.
