raw blueberry cheesecake

Raw-Vegan-Blueberry-Cheesecake-This delicious dessert is both vegan and gluten free, so it can be enjoyed by everyone! 🙂

Filling:

  • 2 cups soaked raw cashews
  • Juice & zest of 1 lemon
  • Honey, to taste
  • 6 tbsp coconut oil
  • 1/2 tsp vanilla essence
  • Pinch of salt
  • 1 cup blueberries
  • 1/2 cup berries to garnish

Base:

  • 5-6 dates, fresh
  • 1 cup pecans
  • 1/2 cup coconut, shredded
  • Honey, to taste
  • 1/4 tsp salt
  • 2 tbsn coconut oil

Method:

To create the base, combine all base ingredients in a food processor until it becomes crumbly and chunky. You will know that it’s ready if you can roll the mixture into a ball and it stays together – if not, add more water. Once the base mixture is ready, press it into a cake tin and place in freezer to chill.

To make the filling, combine ingredients at a high speed in a food processor until smooth. Take the base out of the freezer, add filling on top and then put back in the freezer to set.

Serve topped with berries. Enjoy!
