Our ol’ favourites, the ANZAC biscuits, were sent to our ANZAC soldiers during the war, and are still a popular healthy treat today.
1 1/2 cup of oats
1/2 cup of shredded coconut
1/2 cup of flaked or chopped almonds
2 1/2 tablespoons olive oil or 75 grams organic butter
2 tablespoons of honey
1 tablespoon of water
1 teaspoon of vanilla essence
Combine dry ingredients, mix well.
Add wet ingredients, mix well.
Use baking paper to line a tray and make small round balls with the dough.
Space them out on the tray and press each down with a fork.
Bake for 30 mins (or until golden brown) at 160 degrees.
While you enjoy, take a moment to remember them.
*for a gluten free option, use quinoa
