50 grams butter
1 tblsp honey
1/4 cup coconut sugar
1 1/2 cups wholemeal spelt flour
1 tsp baking powder
2 tsp dried ground ginger
1 teaspoon cinnamon
1/2 cup milk
1 tsp bi-carb soda
1/2 cup dry dates chopped
Preheat over to 170 degrees Celsius.
Line a loaf tin with baking paper.
Melt butter on a very low heat then mix the honey through to warm it gently.
Mix egg and coconut sugar in a bowl. Add butter and honey mixture and combine well.
Add and mix in flour, baking powder, ginger and cinnamon.
Add and mix in milk and bi-carb soda.
Stir through chopped dates.
Pour into tin and bake for 45-60mins (until middle of loaf bounces back when gently pressed and skewer comes out clean).
Let it cool but enjoy warm from the oven or toasted in the sandwich press.
