clean & easy muesli slice

2 cups traditional oats
2 tbls sunflower seeds
2 tbls pumpkin seeds/pepitas
2 tbls sultanas
2 tbls shredded coconut
3 tsp sesame seeds
1/4 cup chopped nuts (e.g. dry roasted almonds, pecans, walnuts – choose what you like)
1 egg
1/2 cup organic rye flour (check the health food aisle)
1 tbls honey
2 tsp coconut oil
You can also add chopped, dried, preservative free fruits (Turkish apricots, cranberries, raisins etc)

Preheat oven to 180 degrees. Mix all ingredients and place into a slice tray lined with baking paper. Flatten with a spatula. Cook for 20 mins. Healthy, delicious and highly nutritious snack, full of protein, fibre, good fat, vitamins and mineral. Try it and let us know what you think!
